After landing a few pike, here’s a good way to cook them up.
PIKE FILLETS IN SIMPLE CAPER SAUCE
4 pike fillets
1/4 c. flour
2 tbsp. butter
1 tbsp. vegetable oil
2 tbsp. capers
2 tbsp. slivered roasted almonds
1 tsp. chopped parsley
Salt and pepper
Juice from 1/2 lemon
Preheat oven to 150 degrees. Dredge pike with flour. Heat oil and half of butter in large frying pan. When hot, add fish and cook 3 to 4 minutes each side over medium heat. Season well. Remove fish from pan and keep hot in oven. Add remaining butter to pan. When melted, cook almonds and capers 1 minute over medium heat. Stir in parsley and lemon juice; correct seasoning. Continue cooking 1 minute. Pour sauce over fish and serve with vegetables.
